Red Wine Selections

Regal Red                                                                                                                                                                                                                                –a full-body, dry wine, made from Texas Malbec grapes; with complex tannins and lush flavors of plums, berries and spice.  Pairs well with beef dishes, turkey, and hearty stews.  A GOLD MEDAL winner in the 2016 Lone Star International Wine Competition.

Tesoro Rojo                                                                                                                                                                                                                          –a bold wine with a complex tannin structure made from Lenoir grapes; it has a smoky oak flavor combined with earthy notes of apple, and a little wild cherry  Pair with duck, venison, and brisket, or raspberries and chocolate.

Red Rooster                                                                                                                                                                                                                         –a dry Texas Tempranillo with characteristic flavors of plum, cherry, and strawberry, mixed with an earthy minerality; Tempranillo wines are perhaps one of the most food friendly wines around. They offer versatility and value – without forsaking flavor and lift. Consider pairing them with their hometown favorites – tapas, pork, and grilled or roasted entrees.

Tailgater                                                                                                                                                                                                                               –a full-bodied, dry wine, made from Texas Merlot grapes; it is fairly versatile when it comes to food pairing options, especially when considering meat.  Poultry, beef, game, or pork, and served grilled, baked, broiled, or even braised; as well as strong, flavorful cheeses like Cheddar, Stilton, and Camembert.

It’s a Zin!                                                                                                                                                                                                                           –the primary flavors of Zinfandel are jam, blueberry, black pepper, cherry, plum, boysenberry, cranberry, and licorice.  When you taste it, Zinfandel seems to explode with fruitiness followed by spiciness.  Although a lighter bodied red wine, Zinfandel’s moderate tannins and high acidity actually give it a bold taste. Try pairing with lighter meats such as quail, turkey, pork, bacon, ham, and veal. It also pairs nicely with barbecued red meats and lamb. 

Audacious                                                                                                                                                                                                                                         – a medium bodied red blend consisting primarily of Cabernet grapes, but with less tannin than standard Cabernet wines.  This memorable red is a dry wine with plum characteristics that is perfect with all manner of red meat including beef steak, lamb, and pork tenderloin with a fruit and spice sauce. 

Valiente                                                                                                                                                                                                                              –an off-dry, full bodied table wine made from estate grapes.  This delightful wine has aromas reminiscent of a freshly cut Gala Apple and a hint of fennel with a  slightly peppery finish.  Pairs very nicely with steak or any tomato based dishes such as spaghetti or chili, as it will stand up to the steak without overpowering it.  We served it on a Wine Trail event with Beef Wellington Bites and it was amazing!

Brazos Blend                                                                                                                                                                                                                        –a blend of two of our estate grapes, Lenoir & Lomanto, fermented with estate blackberries makes this a unique and delicious experience that you won’t want to miss! The polyphenol compounds and ellagic acid in blackberries gives it almost an effervescent mouth-feel, making this a fun as well as delectable wine.

Rodeo Red                                                                                                                                                                                                                             —a semi-sweet wine made form a blend of estate Lenoir & Lomanto grapes; juice of the Lomanto grape is almost a purple-blue-red with a mineral, slightly minty, and black cherry flavors. Lenoir has earthy notes of apple, banana, raspberry, and a little wild cherry-chocolate. It’s been said that Lomanto is a perfect match for tomato pasta being that it is fruit forward with moderate tannins. Lenoir pairs with duck, venison, and brisket or raspberries and chocolate; and together there’s just no limit.  

Fireside                                                                                                                                                                                                                                –a  sweet red blend, best served chilled; doesn’t need to be served with food, but it does  go well with pretty much any mildly flavored meat dish or tomato based pasta or casseroles, and cheddar or other yellow cheeses. 

Lady B (Bobcat) Red                                                                                                                                                                                                        –a sweet blend of estate grapes that is best served chilled; named after a group of absolutely delightful friends that I went through high school with.  I think you’ll find this wine as delightful as they are!

Rudy’s Red                                                                                                                                                                                                                –luscious chocolate and almond flavorings in a somewhat spicy red wine makes this a perfect Valentine’s Day gift, as a hostess gift, or as a treat for yourself.  Affectionately known by many as “Dessert in a Bottle” or “The Tootsie Roll Wine”! Go ahead and treat yourself, you deserve it!


White & Rose’ Wines

Oasis                                                                                                                                                                                                                                       –a dry  wine, best served chilled; similar in style to a Sauvignon Blanc, has luscious fruit aromas such as pineapple, pear and tropical citrus fruit.  Made from Blanc du Bois grapes grown at Mound Prairie Vineyard in Snook, Texas.  Pairs nicely with seafood and pasta dishes with a creamy white sauce; and white cheeses.  It also is a nice accompaniment to Cajun rice dishes such as Sausage Jambalaya.

White Heron                                                                                                                                                                                                                        –a wonderful off-dry wine made from Chenin Blanc grapes, that has apple and pear characteristics. It has just enough residual sweetness from the grapes to offer a pleasant white wine with an amazingly clean finish. A refreshing wine best served well chilled.  Pairs well with lighter dishes such as salads, fish, chicken, and cheddar cheese soup.  Best served well chilled.

A Little Zinful                                                                                                                                                                                                                     –a wonderful White Zinfandel that’s as fun as it is good!  White Zin is a semi-sweet wine made from the red-skinned Zinfandel grape.  It gets its ligher color when the grape skins are quickly removed from the juice. Toast our versatile White Zin with a wide range of foods from holiday turkey to chicken salad and even peach cobbler.

Aloha                                                                                                                                                                                                                                      –not quite a semi-sweet, Aloha is similar in style to a Riesling and best served chilled; this is a  sweeter version of Oasis with the same fabulous tropical fruit aromas.  Also made from Blanc du Bois grapes grown at Mound Prairie Vineyard in Snook, Texas; and it pairs nicely with lighter dishes such as salads, rice and vegetable dishes, as well as white cheeses.  It is also a wonderful complement to holiday offerings such as turkey, ham, and all the sides.  This is the wine we use in making Peach Bellini wine freezes.

Love at First Blush                                                                                                                                                                                                              –our first blush; it’s sweet but refreshing, and it has a hint of peaches.  A great wine to share with a friend or enjoy by yourself! Best served chilled, it’s a great wine for warm summer nights; or try it paired with spicy appetizers and Chinese food. 

Starry Night                                                                                                                                                                                                                          –a Moscato, it is sweet but not over the top; it’s great with lobster, shrimp, and fresh fruit, or as an accompaniment to dessert.

Amore’                                                                                                                                                                                                                                     — a delicious, sweet Blanc du Bois; intensely fruity, it’s a great wine to enjoy chilled on a hot summer day out by the pool, or while relaxing at the end of a meal (or the end of a day)!

Specialty Wines

Just Peachy                                                                                                                                                                                                                              –drinking this delicious wine will bring back memories of biting into one of the wonderful  Fredericksburg Peaches it was made from!     

Dancing Star                                                                                                                                                                                                              –similar to Starry Night, Dancing Stars is also made from Muscat grapes, but has a little “bubbly” to it.  Not nearly a champagne amount of bubbly, but just enough to be fun; also intensely fruity, it’s great for a summertime gathering.  Also tastes well chilled.  If you like Starry Night and enjoy carbonated drinks, you’ll probably like this one a lot!

Enchanting                                                                                                                                                                                                                             –a dry Sparkling White Wine. A great one to enjoy on a special day or with a special someone. Serve well chilled.

Night on the Town                                                                                                                                                                                                             –a semi-sweet Sparkling Blush Wine. Equally awesome one to enjoy when you’re out with friends, or just sitting around reminiscing. Serve well chilled.

Frivolity                                                                                                                                                                                                                               –a sweet Sparkling White Wine. One of our favorites, this bubbly wine is as fun as it is delicious!  This is the wine we use in making Mimosas! 🙂 Serve well chilled.
